
Sweet rowan jam
Description
Homemade preserves keep for a long time. With this classic recipe, sweet rowanberry jam turns out magnificent and incredibly delicious! Legends are told about how good these berries are for you, and people were making treats like this long ago. Serve it at the table or store it in the pantry.

1. I usually make sweet mountain ash berry jam at home from a kilogram of berries. You can use more, at a 1:1 ratio. To taste, I sometimes add lemon while the treat is simmering, and cinnamon.

2. Separate the berries from the stems and wash them thoroughly. Then soak them in cold water for one hour, or better yet for 24 hours (if you have time), so that all excess bitterness is drawn out.

3. Next, make the syrup and boil it for about 10 minutes. Then stir in the berries and set aside until completely cool. After that bring to the boil once more and simmer for another 10 minutes or so. You can add lemon slices at this point.

4. The jam should turn out this thick. Store it in the pantry or cellar until its turn comes.
