
Sakura Jam
Description
Winter preserve made at home. The recipe yields one jar of jam. How do you make cherry blossom jam? 1. Dissolve the gelatin powder with a teaspoon of water and set aside for 5 minutes to swell. 2. Add sugar to the water, place over low heat, and stir until the sugar is completely dissolved. 3. Add the cherry blossoms and a little freshly squeezed lemon juice to the syrup. 4. Add the vinegar and stir until the syrup becomes completely clear. Do not let the syrup boil under any circumstances!!! 5. Continue cooking the syrup at 50–60°C. Use a special thermometer to check the temperature. 6. Add the gelatin to the syrup and stir until it is completely dissolved. 7. Continue cooking the syrup until bubbles appear. When bubbles appear, remove from the heat and let cool. 8. Pour into sterilized jars and seal. Store the jam in the refrigerator.
