Step 1

1. Sort through the rowan berries carefully. If you use frozen berries, that’s fine. Then cover the berries with water and let them stand for about 10 minutes. Next, drain the water and pat the berries dry.

Step 2

2. If you want to remove the bitterness completely, soak the berries in water for twenty-four hours beforehand. You can now make the syrup: bring it to a boil. Add the rowan berries and simmer over very low heat for about 15 minutes. Then take the pot off the heat and leave it in a dark place for twenty-four hours. This way the berries are blanched and keep their shape. The next day, bring to the boil again and set aside.

Step 3

3. If you have rowan berries left over, you can freeze them without hesitation so you can treat yourself to uzvar when it turns cold.

Step 4

4. To finish, pour the treat into jars and seal them. Do not forget to sterilize the jars first. Rowanberry jam from the garden is best stored at home in a cellar or another cool place.
