Rowan jam with honey

Description

I make mountain ash (rowan) jam with honey at home every season, using both fresh and frozen berries. I highly recommend this recipe to everyone because it has stood the test of time. My grandmother used it too and used to spoil the whole family with this wonderful treat. Serve it at the table or store it in the pantry.

    1. Thoroughly wash the berries under running water. Then I usually soak them for about 10 minutes, after which I pour them into a colander and let them drain.

    2. If you have time, pierce each berry with a needle; if not, simply blanch them.

    3. Now put water on the heat, bring it to a boil, and take it off. Pour in our berries and let them stand, then drain them in a colander. When the rowan berries have cooled, add honey and mix. Let the berries stand a little so the honey dissolves completely.

    4. When the juice appears, put the pan with the berries on the heat and bring to a boil. Remember to skim the foam continuously.

    5. Cook the treat until done and let it cool. Then portion into jars and seal.
