
Red Rowan Jam
Description
Winter preserves made at home. 1. It is best to pick rowan berries right after the first frosts, so the berries will not be bitter. 2. Separate the berries from the branches, wash them, and plunge them into boiling water for 5 minutes. Alternatively, spread the berries on a baking sheet and dry them slightly in the oven. 3. For every 1 kg of rowan berries, use 1.5 kg of sugar. Pour the sugar into a container (an enamel basin works best), add 3 cups of water, and bring to a boil. 4. Cook until the sugar has completely dissolved. 5. Add the rowan berries to the mixture and leave for 8 hours. 6. Place over heat and bring to a boil, then reduce the heat and simmer for about 10 minutes. 7. Do not forget to skim off the foam. Repeat this process about 5 times, periodically bringing to a boil and removing from the heat. 8. After the final cooking, let it stand for 12 hours, then pour the jam into sterilized jars and seal.
