Rowanberry Jam

Description

Making rowanberry jam is a fairly long and labor-intensive process, so I recommend cooking a large batch at once. Even if you have nowhere to store it all, you can trade or give it away, nicely presented in decorated jars. Rowanberry jam is very healthy, attractive, and delicious, so be sure to try making it if you have the opportunity to get rowanberries. Don't forget to be creative—you can vary rowanberry jam by adding something extra. And most importantly, be sure to remove the bitterness from the berries.     Separate the rowan berries from the twigs and wash them.

    Cover the berries with water and simmer over low heat for 10 minutes. Drain the water and dry the berries.

    Cook a syrup from sugar and water, add the berries and simmer for 20 minutes. Set aside to steep for 8 hours.

    Do 2 more boils for 10 minutes each and steep for at least an hour.

    For the last time, drain off the syrup and reduce it well. Pack the berries into jars and pour the hot syrup over them. Seal the jars.
