
Peach Jam with Sugar
Description
A simple canning recipe. You can start cooking peach jam with sugar right away, or wait until the peaches mixed with sugar release a little juice. Over low heat, bring the jam to a boil so it does not scorch and all the sugar dissolves, then simmer the peaches on low for 30 minutes. Add more sugar if needed. After pureeing, bring the peach jam with sugar to a boil again and cook for another 15 minutes. Cinnamon is best added at this point. Add saffron at the start—be sure to use good-quality saffron! You may add a pinch of salt along with the sugar. Good luck—and your preserve is ready to store for winter.

Peel the peaches and cut them into pieces. Sprinkle with sugar. Add lemon juice and spices.

Bring to a boil, reduce the heat, and simmer for 30 minutes over medium heat.

Grind the finished jam in a hand mill.

Return the mixture to the saucepan, bring to a boil, and cook for another 15 minutes.

Divide the jam among the jars and sterilize for 10–15 minutes.
