
Greek-Style Peach Jam

A simple way to prepare ahead. I'll share a secret with you. Serve at the table or store in the pantry.

Wash the peaches in cold water; if the skin is too fuzzy, you can remove it by placing the peaches in boiling water.

Slice the peaches into thin slices.

By the way, firm peaches work best; with overripe ones the result may not turn out very well.

Place the peaches in jars and sprinkle sugar on top.

Fill the jars with peaches all the way to the top, as the peaches will settle further during cooking.

Place the jars in a pot of water, cover the pot with a lid, and bring to a boil. The peach will release its juice. In total, the jam cooks for 2–2.5 hours. At the end of cooking, add a little citric acid to each jar (on the tip of a knife). Seal the finished jam with lids and let it cool.
