First, peel the peaches. To do this, place them in boiling water for 30 seconds; the skin should come off easily.

Pour the sugar into a saucepan, add water, place over heat, and bring to a boil.

Place the halved peaches in a pot. Cook for 15 minutes.

After that, using a slotted spoon, remove the peaches and transfer them to another container.

Over medium heat, reduce the syrup by half.

The syrup has reduced. Return the peaches to the pot, add the lemon juice, bring the jam to a boil, and simmer for a few more minutes.

Don't forget to skim off any foam that forms. Transfer the finished jam into sterilized jars.
