
Papaya Jam

Perfect for winter preserves. These days exotic fruits and berries are hardly rare. Supermarket shelves offer a wide variety of them. I would like to suggest making papaya jam—a very healthy fruit. Not everyone likes raw papaya, but jam made with this simple recipe will appeal to almost everyone. So here is a recipe for papaya jam. 1. Wash the papaya, peel it, and cut it in half. Remove the seeds, cut the flesh into small cubes, and sprinkle with sugar. Let stand for about 30–40 minutes until it releases juice. 2. Over low heat, bring to a boil and set aside for a couple of hours. 3. Then return the jam to the heat, bring to a boil again, and add lemon juice and zest. Cook for about 20–30 minutes. 4. Spoon the jam into dry sterilized jars and seal with lids. That is the whole process. In winter, when you open a jar of this jam and taste it, you will realize you did not make enough jam. Serve at the table or store in the pantry.
