Cucumber Jam for Winter

Description

Perfect for winter pantry stocking. To make cucumber jam for winter, you must use some gelling agent: pectin, gelatin, or any other jelling mixture. Choose small, crisp, firm cucumbers. Mint will add a distinctive aroma. Serve at the table or store in the pantry.

    Prepare the ingredients.

    Cut the cucumbers into roughly equal sticks, sprinkle with 150 g sugar, and let stand for about 3–4 hours. Chop the mint and steep in 100 ml boiling water. Let infuse.

    After three hours the cucumbers will have released their juice and the sugar will have dissolved. Place over medium heat, bring to a boil, and simmer for 20 minutes. During this time the cucumbers will change color—don’t worry.

    Chop the mint in a blender; mix the gelatin with the remaining sugar. You can use ready-made lemon juice. After 20 min. of simmering the cucumbers in the syrup, add the mint, the sugar mixed with the gelling mass, and the lemon juice. Bring to a boil and cook for 10 minutes. Let cool. For those who like it, you can add lemon zest.

    Here's the jam we made from cucumbers. We're sealing it in jars (no sterilization needed).
