
Cucumber Jam
Description
Perfect for stocking up for winter. Cucumber jam can be made from cucumbers of any size, which is very handy—you can use slightly overripe, large cucumbers that are no longer good for eating fresh. I like to add citrus and spices so the cucumber jam isn’t too bland. You can pair cucumbers with any fruits and berries; I highly recommend trying it with red currants. Read on. Serve at the table or store in the pantry.

Prepare cucumbers, lemon, orange, and seasonings.

Remove seeds from the cucumbers and cut into pieces.

Cut the lemon and orange into slices, remove the seeds, and add the seasonings and sugar.

Combine with the cucumbers and let stand for 1 hour until the cucumbers release their juice. Cook for about 30 minutes until the syrup thickens.

Pack into jars and sterilize for 10 minutes.
