It’s a very interesting and successful pairing: white wine only enhances and highlights the berry’s natural flavor qualities, and in the end you get an excellent treat that will delight you all winter long. Don’t forget the benefits of this jam either: cloudberry ranks first in vitamin A and C content, even ahead of oranges, and this berry has many other useful properties as well. In short, with this cloudberry jam with white wine recipe you can make a tasty and healthy treat. 1) First, rinse the cloudberries thoroughly under water and drain them in a colander so the water runs off. 2) Put the dry berries in a saucepan, drizzle them with the juice of half a lemon, and add two cups of sugar. Cover the berries with cheesecloth folded in half and leave overnight so they release their juice. 3) In the morning, put the saucepan with cloudberries on low heat and cook for 15–20 minutes. When all the sugar has dissolved, pour in the white wine, stir everything, and bring the mixture to a boil. 4) Then carefully remove the berries from the syrup and spread them into sterilized jars; add the remaining sugar to the syrup and cook it for another 10–12 minutes on low heat. 5) Pour the hot syrup over the berries in the jars and seal them.
