Five-Minute Cloudberry Jam

Description

A simple way to make preserves ahead of time. Every homemaker has her own reason for choosing this method of making jam: some simply want to get the job done quickly and do not want to spend much time on it, while others prefer this option because it helps preserve the beneficial vitamins and trace elements in the berries. And indeed, as with all five-minute jams, in this simple cloudberry five-minute jam recipe we will not cook the berries for long—we will keep them over the heat for no more than 5 minutes. That way we can achieve excellent flavor while not losing all the benefits from prolonged heat treatment. So making tasty and healthy cloudberry five-minute jam will not be much trouble for us—let’s get started. 1) First, as always, we sort through the berries and remove any spoiled ones, then rinse the cloudberries under cool water and drain them in a colander so all the water runs off the berries. 2) Now we need to prepare the syrup, so we take a saucepan and pour 1.5 cups of water into it. We set the saucepan over low heat and begin adding sugar to the liquid in small portions, stirring. When all the sugar is in the saucepan, we bring the mixture to a boil and cook the syrup for 5–7 minutes until the sugar crystals have dissolved completely. 3) We put the dry cloudberries into a jam-making basin and pour hot syrup over them. We set the basin over the heat and, stirring, bring it to a boil, skim off the foam from the surface, and cook the cloudberries for 5 minutes, then remove from the heat and let the mixture cool completely. 4) Then we return the basin to the heat, bring the mixture to a boil again, and cook for 5 minutes. Now we carefully remove the berries from the syrup and rub them through a sieve until smooth. 5) When the berry pulp has cooled, we add it back to the syrup and heat and cook one last time for 5 minutes, then divide the hot jam among sterilized jars and seal them. We turn the jars upside down and leave them to cool at room temperature, then move them to a cool, dark place for storage. The finished jam not only has excellent flavor but also healing properties—it will help strengthen your immune system and relieve cold symptoms.
