Cloudberry Jam for Cough
Description
A simple canning recipe. Unfortunately, this juicy, delicious, and incredibly healthy berry is truly scarce here, and you’ll have to hunt around to find it—but it’s worth it. When I was little, my grandmother made cloudberry jam for coughs at home; she always said it was the best remedy for a cold. Maybe it was all the power of suggestion, or maybe the jam really did help—but either way, the cough went away. So now that I’ve grown up, like my grandmother, I make this wonderful jam too. It’s not only healthy but also incredibly tasty and fragrant, and the recipe for cloudberry cough jam is very simple and easy, so be sure to try making this excellent treat. 1) First, sort through the berries, remove any debris, put the cloudberries in a colander, rinse them under cold water, and leave them over a pot so the water can drain off. 2) Next, prepare a sugar syrup: pour water into a clean pot and add the sugar. Set the mixture over low heat and warm it until the sugar crystals are completely dissolved. 3) After the liquid comes to a boil, add the berries to the syrup and simmer them over low heat for 40–50 minutes. 4) When the time is up, carefully remove the cloudberries and rub them through a sieve, then return them to the syrup and cook for another 15–20 minutes. 5) Remove the pot from the heat and let the jam cool, then divide it among sterilized jars and seal with lids. Store in a cool, dark place. The jam turns out very tasty and bright, a golden-sunny color. It will not only help you get over a cold but also lift your spirits. The preserve is ready to store for winter.
