
Mandarin Jam with Peel

Step 1

Prepare the mandarins. Wash them thoroughly and place them in a deep bowl. Cover with cold water and leave for 24 hours; this will remove bitterness from the jam you are about to make.

After 24 hours, drain the water and rinse the mandarins again. Slice the citrus into wedges about 1 cm thick and remove the seeds. Transfer the mandarins to a deep pot, pour 1 L of water over them, and add the sugar. Let the mandarins marinate for another 24 hours.

After some time has passed, place the pot on the heat and start cooking. Bring to a boil, reduce the heat, and cook until thickened, stirring occasionally with a wooden spatula.

Pour the finished jam, at the desired consistency, into sterilized jars and seal tightly with lids. Turn the jars upside down until the jam has cooled completely.
