Raspberry and Strawberry Jam

Description

A simple preservation recipe. For jam, you can use berries in any proportion. The best option is equal parts raspberry and strawberry (1:1). Depending on how sweet the berries are, you can adjust the amount of sugar up or down. Jars keep for up to a year in a cool place.

    To make the jam, prepare the necessary ingredients. Sort through the raspberries to remove leaves and stems.

    Rinse the strawberries well and leave them in a colander so the excess water drains off.

    Then remove the stems from the strawberries and cut the berries into 2–4 pieces.

    Sprinkle the strawberries with sugar.

    Add the mashed raspberries to the bowl.

    Mix everything and let stand for several hours so the berries release their juice.

    After a while, juice will appear in the berries. Place the bowl over the heat. Stirring, bring to a boil. Cook over low heat for 10–15 minutes. If foam appears, skim it off.

    During cooking, the jam has thickened slightly. Remove it from the heat. Let it rest for a while. During this time, all the air bubbles that formed while cooking will settle.

    Sterilize clean jars using any convenient method. You can do this in the oven, in the microwave, or over hot steam.

    Spread the jam into prepared sterile jars. Scald the lids with boiling water. Seal the jars with the lids.
