Lemon Preserve with Peel

Homemade preserves keep for a long time. Everyone knows that lemons are a good remedy for colds, especially if you add a little honey, but not everyone knows that these citrus fruits can be turned into an excellent treat. We will fix that, because right now I will tell you how to can lemon jam with peel. This jam turns out incredibly delicious, with no bitterness at all, and its color is golden and sunny, so even its appearance alone can lift anyone’s spirits. Everyone loves this fragrant treat, adults and children alike, so if you make lemon jam with peel at home, your whole family will be able to enjoy it in autumn and winter. The preserve is ready for winter storage.

    The first stage of preparation is the longest: we need to wash the lemons and cut each one into 4 pieces. Then pour water into a deep bowl, add salt, and place the cut lemons in it. Keep them in the water for three days, changing the water every day, but do not add more salt. All these steps are needed to remove the bitterness from the future preserve.

    On the fourth day, cut the zest from the lemons and place it in a saucepan. Cover with water and place over heat. As soon as the liquid comes to a boil, remove the pan from the heat, drain the water, and add fresh water. Bring to a boil again, drain, and add fresh water again. Repeat this entire procedure three times in total.

    After the third time, drain the water and blend the peel using a blender.

    With the peel sorted, clean the lemon segments of membranes and white pith, and chop them finely.

    Mix the chopped lemon zest and pulp, weigh them, and transfer to a saucepan. Add exactly as much sugar by weight as the lemon mixture (in my case, 700 grams).

    Place the pot over low heat and cook the jam for 30–40 minutes after it comes to a boil; as soon as it thickens, remove it from the heat.

    Pour the hot jam into sterilized jars and seal with lids. Leave under a blanket until completely cool, then move to a cool place. The jam turns out very tasty and keeps quite well. Enjoy your meal!
