
Lime jam
Description
Perfect for winter preserves. Below is a simple lime and fig jam recipe. The recipe uses lime pulp, juice, and zest as catalysts and the main components of the aftertaste. Jars keep for up to a year in a cool place.

Wash the figs in cold water and pat dry with a dry towel.

We sprinkle the bottom of the saucepan with a mixture of sugar and pectin.

Cut the fig into slices and arrange them on top of the sugar in the saucepan.

Using a grater, remove the zest from the lime.

Place the juice squeezed from the lime, together with the pulp and zest, in a saucepan with the figs; also add orange liqueur.

Leave the pot with all its contents for half an hour. Allow time for the juices to release.

Cook the mixture over medium heat for 20 minutes.
