Thick gooseberry jam

Description

Homemade winter preserves. I’m sure this simple recipe for thick gooseberry jam will be to everyone’s taste without exception! To get jam that is really thick, you need to cook it down for quite a long time, until it darkens and thickens. But don’t forget to stir, or it will scorch! There is also another secret to that thickness in this thick gooseberry jam recipe: choose raspberries as soft as possible, but gooseberries, on the contrary, are better half-green—they have more pectin, which gives the jam a pleasant thickness.
