
Gooseberry Jam
Description
A winter preserve for the home. Of course, this recipe for royal gooseberry jam is not the fastest—and by the time you’ve removed the seeds from every single berry, you may not even want jam anymore. But it’s worth being patient: the result will definitely please you; jam like this, made from royal gooseberries at home, always turns out beyond all praise. Jars keep for up to a year in a cool place.

1. Wash the berries and remove any small debris.

2. Cut off the stems and make a crosswise slit in each berry.

3. Using tweezers, a little spoon, or scissors, carefully remove the seeds from each berry.

4. Rinse the berries in cold water, then drain in a colander. Bring water to a boil with cherry leaves and sugar.

5. After all the sugar has dissolved and the syrup comes to a boil, remove from heat. Take out the leaf and add the berries. Leave to infuse for 5 hours, then put back on the heat and boil down to your desired thickness. Done!
