
Gooseberry jam without water

Prepare all the ingredients.

Wash the gooseberries, transfer to a colander, and let the excess water drain off.

Then sort through the berries and trim off the tails on both sides. Transfer to a deep bowl.

Cover the gooseberries with sugar and mix. Lightly crush the berries so that some burst and release their juice. Leave for 3–5 hours until the sugar dissolves and turns into a syrup.

Transfer the resulting mixture to a saucepan or sauté pan. Bring to a boil over low heat and cook for 10 minutes.

Remove from the heat and let cool completely.

Bring to a boil again, simmer for 10 minutes over low heat, then remove from the heat. Repeat this step 1–2 more times. Spoon the hot jam into clean sterilized jars and seal hermetically.
