Five-Minute Strawberry Jam

Description

Perfect for stocking up for winter. Select the strawberries for the jam carefully, as the cooking time will be minimal. Prepare and sterilize the jars in advance using any convenient method; scald the lids so they are dry. This jam has less sugar than fruit, so it better preserves the flavor and aroma, but it must be stored in the refrigerator. Serve at the table or keep in the pantry.

    Prepare all the necessary ingredients for making five-minute strawberry jam.

    Sort through the strawberries carefully, removing spoiled and bruised ones. Wash the berries and drain them in a colander until all the water has run off.

    Remove the green hulls from the strawberries.

    Layer the strawberries with sugar, layer by layer, in the container you will use to cook the jam; I use a heavy-bottomed pot. The top layer should be sugar.

    Cover the bowl with a clean cloth and let stand for 8 hours so the strawberries release their juice.

    Place the pot with berries over medium heat and bring to a boil.

    Cook the jam for five minutes after it comes to a boil and the sugar has dissolved.
