Description

This is a very interesting version of strawberry jam that will appeal to those who love whole berries. Thanks to cooking the berries and syrup separately, French-style strawberry jam made at home turns out thick, rich, and very appetizing. Store in a cool, dark place.

Instructions

  1. 1

    Step 1

    Step 1

    1. Clean the berries of stems, wash them thoroughly, and drain them in a colander so excess water runs off. Then transfer them to a deep bowl or basin.

  2. 2

    2. Sprinkle in the sugar, gently shake the bowl (do not stir with a spoon), and let stand for 4–5 hours. This French-style strawberry jam recipe has no strict time limits; if you like, you can leave the berries in the sugar overnight.

  3. 3

    3. When enough juice has been released, you can put the jam on the heat. Add the juice of 1–2 lemons to the berries (depending on your taste preferences and how sweet the berries are). Bring to a boil, reduce the heat to the minimum, and simmer for about 5–7 minutes. Then remove from the heat and let it cool completely.

  4. 4

    4. Carefully remove the berries from the cooled jam and transfer them to a separate container. Place the berries over heat and let them simmer on low heat.

    Step 5

    5. Simmer the berries over low heat, and reduce the syrup in a separate small saucepan. It should be thick: a drop should not spread on the spoon. Once the berries and syrup have reduced, combine them. Return to the heat and cook for about 5 minutes.

    6. At this point, the homemade French-style strawberry jam is ready. Pour it into sterilized jars and seal. Leave the jars until completely cooled, then store in a dark, cool place.
