
Cactus Jam
Description
A simple way to make preserves ahead of time. You get beautiful cactus jam if the fruit is ripe and juicy. If you have a summer house on Mallorca or Malta))), be sure to cook up a batch of this jam! You'll definitely have something to surprise your guests with :) After all, even the name alone—cactus jam—sounds very exotic. I don't even know whether you can buy the fruit needed for this jam anywhere here in Russia... Either way, here goes. Jars keep for up to a year in a cool place.

Step 1

Jam is made from ripe prickly pear fruits.

Soak the cactus fruit in water, peel and remove the skin and large seeds. Use gloves.

Prepare a sugar syrup, add pieces of prickly pear fruit, bring to a boil, and set aside to cool for 2 hours.

Bring the jam to a boil again and simmer over low heat for 20 minutes. Add lemon juice and cinnamon.

Divide the finished jam among the jars.
