Ginger Jam

Description

Perfect for winter pantry stocks. To make ginger jam, you need little—just ginger and a couple of inexpensive, easy-to-find ingredients. Ginger itself is cheap right now too (in our town, a kilogram costs less than 100 rubles), so it’s quite budget-friendly. I wouldn’t call it an outright delicacy, but you can make one or two jars. You get a jam with a very sharp, intense flavor that works much better not with sweet dishes but, on the contrary, as a seasoning for meat, for example—if you find such pairings acceptable. As for the health benefits of this jam, I’ll stay quiet, since they’re more than obvious :) So, ginger jam recipe: 1. Peel the ginger root and slice it into thin rounds. 2. Cover the ginger with water and soak for three days, changing the water three times a day. 3. Make a thick syrup from water and sugar, add the soaked ginger pieces, and simmer over low heat for 5 minutes. 4. Cool, let stand for 2 hours, then simmer again for 5 minutes. 5. Repeat the procedure once more, adding honey and pectin. 6. Cool the finished ginger jam, pack into jars, and store in the refrigerator. I recommend blending the finished jam so you get a smooth paste. The syrup is very good made with orange juice.
