
Duchess Pear Jam
Description
A simple preserving recipe. To make sweet Duchess pear jam, start by softening the pears in boiling water. The cooking liquid from the pears will also be used later. Mash the pears through a sieve, then cook them in that liquid with sugar added. Store the jars for up to a year in a cool place.

Wash the pears in cold water, peel them, and remove the cores. Cut the flesh into slices. Place the pears in a saucepan with water and simmer for about 3–5 minutes until softened.

Rub the soft pear slices through a sieve until mashed. Transfer the pear puree to a saucepan with the water in which they were boiled, and sprinkle with sugar. Place the saucepan over low heat and, stirring, cook until the volume of the mixture is reduced by half.

While the boiling is in progress, sterilize the jars. Submerge them in a pot of boiling water for 10–15 minutes.

Transfer the jam into jars, seal them (or close with lids) and leave at room temperature for one day for storage. After that, the jam is ready to serve.
