
Pear Jam in Its Own Juice

Wash the pears in cold water.

Slice the pears into wedges and remove the cores. Leave the pears in a bowl of sugar for several hours. This is needed so the pears can release their juice.

Make a syrup from water and sugar. Add sugar to a saucepan of water. Boil until foam appears. When foam appears, you can add the pears. Add lemon zest to the saucepan.

Squeeze the lemon juice into the saucepan with the pear puree.

Cook in two stages. First bring to a boil and simmer for 15 minutes over low heat. Then let it cool and bring to a boil again. After that, pour the pear jam into jars.
