Description

Perfect for winter preserves. The finished jam should have a consistency similar to condensed milk. Milk-based jam will be much thicker than water-based jam. To make pear jam in milk at home, you will need a large pot and 12 hours of free time.

    Wash the pears in cold water, peel them, and remove the cores.

    Using a meat grinder, grind the pear flesh.

    Add the sugar and baking soda. Mix.

    Pour in the milk, stir again, and let steep for 2 hours.

    Bring the mixture to a boil, then simmer over low heat for 8 hours.

    The jam will be ready when its volume has reduced to approximately one-quarter of the original. You can also check by seeing how quickly a drop of jam runs down the side of the dish—the slower it runs, the more done it is.
