Pear jam from overripe pears

Description

A simple way to make preserves ahead of time. Windfall pear jam is a very original recipe for spicy jam. Ginger adds an unusual flavor and aroma that is sure to please those who are tired of classic jams and sweets. This jam is perfect for making pies, as well as a filling for cookies, buns, and other baked goods. The jam is interesting on its own, too. I often use it on toast for breakfast.     Wash the pears thoroughly, peel them, and cut into small pieces. Place the pear pieces in water with lemon juice so they do not darken.

    Grate fresh ginger on a fine grater.

    Put the pear pieces and brown sugar in a thick-bottomed saucepan. Cook over low heat, stirring, until the sugar melts.

    Then add anise, nutmeg, ginger, a cinnamon stick, pectin, and 1/4 cup sugar. Cook over high heat until it comes to a boil.

    Then add the remaining sugar and a teaspoon of butter. Bring the contents back to a boil, leave for one minute, then remove from the heat and take out the cinnamon and anise.

    Then pour the jam into hot sterilized jars, seal them, and keep them in a water bath for about 20 minutes. Then store in a dry, dark place or in the refrigerator.
