Perfect for winter pantry stocks. I believe every homemaker should keep a quick, simple 15-minute grapefruit jam recipe on hand—just in case, as they say. For example, one winter you crave something tasty, but all your preserves are gone, so you have to go to the store, where most fruit tastes like plastic, while grapefruit, year-round, hides plenty of nutrients under its thick peel. That’s why it makes excellent jam that lifts your mood and improves how you feel—and you can make it very fast. So I recommend this 15-minute grapefruit jam recipe to everyone: it’s very simple and convenient, and the jam turns out superb. 1) First, wash the grapefruits well and grate a little zest from one of them—about 1.5 teaspoons. Then peel the fruit, separate into segments, remove the membranes and white pith, and cut each segment into 3 more pieces. 2) Put the cleaned, chopped flesh (you should have about 300 grams) in a deep glass microwave-safe dish. Add sugar and 1.5 teaspoons of zest to the grapefruit, mix everything, and microwave for about 15 minutes; if you want a thicker jam, you can leave it in the microwave a bit longer. 3) Add pink pepper berries to the hot jam and spoon it into a clean jar, drop in a sprig of mint, and seal tightly. When the jam has cooled, store it in the refrigerator. Since we didn’t add much sugar, don’t keep it at room temperature—refrigerate it instead. It’s very tasty and juicy, with a wonderful aroma—just the thing to lift your spirits on cold winter evenings. Jars keep for up to a year in a cool place.
