
Grapefruit Jam

A simple way to make preserves ahead of time. Grapefruit jam is an exotic treat; its flavor is unusual, slightly bitter. It's a good choice for those who can't or don't like to eat grapefruit fresh. Peel the grapefruit, making sure to remove the white membranes; they are bitter.

Remove the zest from one orange and cut into thin strips.

Cover the zest with cold water, boil for 5 minutes, drain the water, cover again with water and boil for 5 minutes more to remove the bitterness.

Add zest and sugar to the grapefruit. Bring to a boil.

Simmer over low heat for about 2 hours; add cinnamon at the end.

Let the jam cook for about another half hour. It should thicken.
