
Elderflower Jam
Description
A winter preserve made at home. Elderflower jam will boost your immune system, ease inflammation, and become a favorite treat for children and adults alike. This jam is very easy to make. See the recipe. Serve it at the table or keep it in the pantry.

1. Gather the elderflowers and rinse them under water to remove insects and dust.

2. Separate the flower heads from the stems. Then measure the flowers using a jar. For the recipe you need 1 full one-liter jar of flowers with no stems.

3. Cook a syrup from sugar and water. Pour the boiling syrup over the flower petals.

4. Let them cool for 12 hours.

5. After 12 hours, simmer the flowers for another 15 minutes. Then strain through cheesecloth or a sieve.

6. Then cook the resulting sweet syrup until it thickens; adjust the viscosity to your taste. I simmered it for 1 hour, and the volume reduced by half. The jam turned out chewy and thick.
