
Cherry Plum Jam for Winter

Winter preserves at home. Cherry plums grow almost everywhere; these fruit trees do not require any special care and almost always produce a very abundant harvest. Cherry plum season begins in late June to early July, so its fruit is among the first to appear in abundance at markets and, therefore, in our kitchens. However, making proper cherry plum jam for winter at home is not such an easy task, because to make it tasty while keeping the cherry plums from overcooking and turning into mush, you will need to spend several hours. Still, if you do not shy away from the effort and decide to make such jam, your work will be richly rewarded—I am sure your whole family will truly appreciate the excellent taste of this treat. Step 1

First, wash the cherry plums, cut them in half, and remove the pit from each fruit; place the cherry plums in a basin. Now prepare the sugar syrup: pour 4 kg of sugar into a saucepan and add a glass of water. Place the mixture over heat and warm it, stirring, until the sugar dissolves. Then add the remaining sugar and another glass of water; continue heating until you have a fairly thick, opaque sugar syrup. Pour the hot syrup over the cherry plums and leave them overnight.

When we look inside the bowl in the morning, we’ll see that a firm sugar crust has formed on the cherry plums — and that’s exactly as it should be.

Carefully remove it and transfer to a saucepan or deep bowl. Cover the basin of berries with another basin and pour the juice that has drained from the cherry plums into the bowl with the sugar cap. Place the bowl over heat and bring the syrup to a boil once more.

Again pour hot syrup over the plums and leave the fruit to steep for several hours. Then repeat this procedure 3–4 more times.

When we pour the syrup over the berries for the last time, place the basin with them on the heat, bring the mixture to a boil, and cook the cherry plums for 1–2 minutes.

Now the jam is ready; all that remains is to divide it among sterilized jars and seal them. When you open the jam in winter and taste it, you will see that all the time you spent making it was worth it.
