
Pitted Cherry Plum Jam
Description
Homemade preserves keep well for a long time. If you want delicious cherry plum jam with whole berry pieces rather than puree, use this fairly simple pitted cherry plum jam recipe. Jam made with this recipe turns out thick and rich, with firm, springy pieces of fruit. The process is quite easy, though you will need patience. But the result will delight you.

Step 1

For jam, it's better to use fruit that is not overripe. Wash the cherry plums thoroughly and remove the pits. Put the berries in a saucepan.

Make the sugar syrup. Pour water into a saucepan, bring it to a boil, and add the sugar gradually. Stir constantly. As soon as the sugar has dissolved and the syrup comes to a boil, remove from the heat.

Pour hot syrup over the cherry plums and leave overnight.

In the morning, a "cap" of hardened sugar may form on the cherry plums. Remove it into another container and carefully pour the collected juice in there as well.

Bring the juice drained from the jam to a simmer over low heat and pour it over the berries again. Let stand for 3–4 hours. Then repeat the process 3 more times.

With each repetition, the syrup should become thicker and richer. After you repeat the pouring process 3–4 times, bring the jam with berries and syrup to a boil and pack it hot into jars. This is what the jam looks like at the end of cooking.
