Acacia Jam

Description

Homemade winter preserve. For our jam you need fresh acacia flowers. Remove the stamens, stems, and receptacles, and rinse the florets. They say it’s best to pick the flowers after rain, while they’re still dewy. Well then, the flowers are ready; now we’ll find out. The jars keep for up to a year in a cool place.

    1. Place the cleaned and rinsed flowers in the saucepan where you will cook the jam.

    2. Cook a syrup from sugar and water. To do this, first pour the water into the sugar, then place the container with the water and sugar on the stove and, stirring, dissolve the sugar.

    3. Pour the boiled syrup over the flowers. Cook the mixture over low heat for 35–40 minutes. Remember to stir constantly.

    4. After the specified time has elapsed, strain the jam through a sieve and cook for another 10 minutes.

    5. Place the jam in sterilized jars and seal them. Wrap the jars in a blanket and let them cool. Store in a dark, cool place.
