Rinse the quince thoroughly under running water.

Grind the quince in a blender.

Finely grate the lemon zest and squeeze out the juice.

Then put the quince in a saucepan, cover with water, and add the juice and zest. Simmer over low heat for about 10–15 minutes. The quince should become soft. Then add the fructose, stir, and bring to a boil again. Reduce the heat and cook the jam for about an hour over very low heat. During this time the jam should take on a beautiful pink hue.
