Quince jam

Description
When quince jam is cooked this way, it turns amber, and the slices themselves are semi-transparent and pleasantly firm. Quince jam is so fragrant and one of a kind that it needs no spices at all. I strongly recommend making this treat if you can pick or buy good quinces—you won’t regret it. My recipe will show you how. The preserve is ready for winter storage.

Take ripe quince.

Peel the quince, remove the seeds, and cut into wedges.

Make a decoction from the peel and water. Strain, add sugar.

Pour syrup over the quince, bring to a boil, and cook for 10 minutes. Let stand for 4 hours.

Cook the quince for 10 minutes, then set aside again to steep for 4–8 hours.

Bring the jam to a boil for the third time and cook until done. Pour the jam into jars.
