
Apricot Jam with Pits
Description
The method of making this jam is unique because the fruit pits add to its flavor. The result is an amazing treat that both adults and children will enjoy. Jars can be stored for up to a year in a cool place.

1. To make homemade apricot jam, you need only a few ingredients, and most importantly — time and patience. So, wash and dry the apricots, split them in half, and remove the pits.

2. I usually wash the pits as well, then dry them the same way as the fruit. It’s better to use larger apricots.

3. You can insert the kernels from the pits into the fruit, but I usually split the apricots in half and add the kernels separately. Now dissolve the sugar in hot water and simmer it for about 2–3 minutes. Bring it to a boil and turn off the heat. You now have a syrup.

4. Leave the apricots in the syrup for 12 hours, then cook the jam for 2 days. I bring it to a boil, skim off the foam, and turn off the heat. On the third day, seal the jam in sterilized jars and store it in the cellar or pantry.
