1. Cut the quince into 4 parts, remove the seeds and core. Pour in water and cook until soft.

2. Filter the decoction through gauze. Use a measuring cup to measure the required amount of decoction, then continue boiling it for another 30 minutes.

3. Then add sugar, calculating 600 grams of sugar per 2 liters of decoction.

4. Insert the thermometer and reduce the syrup. When the temperature reaches 108 degrees Celsius, the syrup is ready.
