
Boiled adjika for winter
Description
Homemade preserves keep for a long time. Making adjika is very simple: you only need a meat grinder or blender on hand. Grind all the vegetables, boil them, and seal in jars. Good luck.

Prepare all the vegetables: wash them, remove the seeds and stems, and peel them.

Cut the peppers into pieces that are easy to grind. I left the hot pepper whole and only trimmed off the stems.

Mince the pepper and garlic.

Chop the bell pepper.

Puree the tomatoes (you can run them through a juicer).

Put the vegetables on to simmer over low heat; once boiling, cook for 35–40 minutes.

Prepare the oil, vinegar, and spices.

Add them to the adjika and simmer for another 10 minutes.

Divide the prepared adjika among sterile jars and seal with sterile lids. Turn the jars upside down until they have completely cooled. Done!
