Description

If you love sponge cake but dislike its dryness and always soak it with syrups or toppings, then this recipe is just for you! Thanks to the added boiling water, the batter turns out more delicate, moist, and tender. This sponge cake is perfect with tea or coffee, and great for making cakes, pastries, and other desserts.

Instructions

  1. 1

    Step 1

    Step 1

Prepare the listed ingredients. You can use 4 large eggs or 5 small chicken eggs. It is advisable not to reduce the amount of sugar and flour. Instead of vanilla sugar, you can use flavoring or syrup.

Break the chicken eggs into the bowl of a food processor and add salt, granulated sugar, and vanilla sugar. Beat for about 4-5 minutes at the highest speed.

Add the premium wheat flour to the container. You can sift it beforehand—this will make the biscuit lighter and fluffier. Incorporate the flour into the egg mixture at the lowest speed or use a whisk or silicone spatula. Do not beat, so as not to release air bubbles from the batter.

Preheat the oven to 180 degrees and grease the baking pan with vegetable or butter, making sure to coat the sides as well. Pour 1 tablespoon of boiling water into the batter at a time, mixing immediately. Then pour the prepared batter into the pan and place it in the oven.

  5. 5

    Step 5

Bake for about 20-25 minutes, keeping an eye on the surface. Check the cake for doneness with a wooden skewer—it should come out dry. Remove the pan from the oven and turn it on its side to prevent the cake from collapsing while cooling. Let it sit for 30-40 minutes, then carefully remove it from the pan.
