Vanilla buns with sugar and cinnamon
Description
Homemade baked goods for tea. I suggest making the dough by the sponge method with fresh yeast. Brown sugar in the filling is optional—regular white sugar works too. The bake is ready. Serve at the table.
Instructions
- 1
Step 1

Prepare all the ingredients right away. Warm the milk slightly in a saucepan over low heat to 35–38 degrees Celsius.
- 2
Step 2

In a roomy bowl, rub the yeast with your fingers and add 1 tablespoon of sugar.
- 3
Step 3

Pour warm milk over the sugar and yeast, whisk until the yeast has fully dissolved, then sift 4–5 tbsp of flour into this yeast mixture.
- 4
Step 4

Using a whisk, vigorously mix these ingredients until you have a smooth mixture with the consistency of pancake batter—this is the sponge. Cover the bowl with a kitchen towel and let stand for 30 minutes.
- 5
Step 5

After half an hour the sponge had noticeably increased in volume and developed a porous structure.
- 6
Step 6

Мой император! 🌸 Вот перевод, как Вы и повелели: In a separate bowl, pour the butter (80 grams) melted in a saucepan over low heat, add the white sugar, vanillin, and beat in the egg. Готова служить дальше, мой император! ✨👑
- 7
Step 7

Whisk these ingredients vigorously until the mixture is smooth and uniform.
- 8
Step 8

Pour this egg-and-butter mixture into the bowl with the sponge starter.
- 9
Step 9

Mix these two mixtures with a spoon.
- 10
Step 10

Now sift the flour in batches, mixing it in first with a spoon, then with your hands. You may need a little more or a little less flour than listed in the ingredients.
- 11
Step 11

Knead the dough by hand for 7–8 minutes until you have a soft dough that does not stick to your hands. Shape it into a ball in the bowl, cover with a kitchen towel, and let rise for about 1 hour. At the 30-minute mark, give it one fold.
- 12
Step 12

After an hour, the dough had increased greatly in volume.
- 13
Step 13

Lightly dust your work surface with flour and roll the dough out with a rolling pin into a rectangle about 7 mm thick. Brush the surface of the dough with a thin layer of softened butter (20 grams).
- 14
Step 14

In a separate small bowl, combine the brown sugar and cinnamon, and mix.
- 15
Step 15

Evenly spread the brown sugar and cinnamon mixture over a thin layer of butter.
- 16
Step 16

Roll the sheet of dough into a roll shape and cut it into equal pieces with a knife. Place the pieces cut side up on a baking sheet lined with baking parchment. Leave the shaped future buns like this for 15 minutes, then bake in an oven preheated to 180°C for 20–25 minutes. Do not open the oven for the first 20 minutes.
- 17
Step 17

The finished buns can be served at the table right away.
