
Vanilla-lavender cookies
Description
The pastry is simple and quick to prepare. A recipe for shortbread cookies with vanilla and dried lavender flowers. You can replace the lavender flowers with an equal amount of tea leaves. Serve with tea or coffee.

1. In a large bowl, use a mixer to beat the butter and sugar together. Add the egg and beat. Mix in the vanilla extract. In a medium bowl, combine the flour, lavender flowers, and salt. Add the flour mixture to the butter mixture and beat until well combined.

2. Dust your hands with flour and place the dough onto a piece of plastic wrap. Roll into a log about 25 cm long. Wrap the dough in plastic and chill in the freezer for 30 minutes or in the refrigerator for at least 1 hour.

3. Preheat the oven to 150 degrees. Remove the chilled dough from the plastic wrap and slice it into pieces about 1 cm thick. If desired, use a small round knife (such as an apple corer) to make a small round hole in the center of each cookie. Sprinkle one side of each cookie with sugar. Place them sugar-side up on a baking sheet lined with parchment paper or a silicone baking mat, spacing them about 5 cm apart. If the cookies have become too soft and warm by this point, chill them in the refrigerator for at least 15 minutes before baking.

4. Bake the cookies for 17–20 minutes, until golden brown. Let cool completely before serving.
