
Vanilla Cottage Cheese Easter Pudding

The dish is prepared without unnecessary complications. In fact, making cottage cheese paskha is very easy, especially these days when you can use a blender to achieve a smooth consistency. This recipe is great because you add soaked raisins, dried apricots, and candied fruits to the cottage cheese, which greatly enhances the flavor of the finished paskha. You can also add some nuts, and replace lemon zest with orange zest—it will be delicious! Be sure to make this tasty and incredibly tender paskha for your loved ones. The ready dessert can be served at the table.

1. First, soak the raisins and candied fruits in brandy, then place in the microwave for 10 seconds. Add lemon zest, vanilla sugar, and powdered sugar to the cottage cheese.

2. Gently mix with a spatula, then blend the mixture with a blender. Next, add apricots, candied fruits, and raisins.

3. Add the cream and egg yolks to a saucepan, heat over low heat until almost boiling, until the mixture becomes thick and creamy. Let the cream mixture cool for 15 minutes, then pour it into the cottage cheese mixture and mix well.

4. Place the cottage cheese into a previously lined baking dish (square or round) with parchment paper, smooth the top, and refrigerate overnight.
