Description
These pies are good both on their own and as a complement to first courses or simply with tea. You can take them with you to work as a snack. Serve cooled or slightly warm.

For the dough, combine melted butter, kefir, salt, baking soda, and flour. The dough should be soft and non‑sticky. Cover with a bag and let it rest for about 20 minutes.

For the filling, finely chop the onion, dice the potatoes, and add them to the ground meat. Salt to taste, add a little seasoning. Mix everything well.

Divide the dough into equal pieces. Roll each piece into a round flatbread, and place the filling in the center as a mound. Lift the edges of the dough upward and pinch them together around the circle. Leave a small opening in the center. Place all the pies on a baking sheet, brush with egg yolk, and put them in an oven preheated to 180 °C for 35 minutes. Then pour a little broth (1–2 tsp) into each pie and bake for another 15 minutes.
