
Waffles with psyllium
Description
You can use the unsweetened waffle variation instead of bread to make a sandwich or an open sandwich. If you add a sugar substitute and cinnamon to the batter, you can serve the waffles as a dessert with coffee and tea. You can also serve them with tea or coffee.

Prepare the ingredients for making keto waffles. You can use coconut flour instead of almond flour. This amount of ingredients is intended for 8 small waffles.

Crack 3 eggs into a bowl and mix them with a fork or a whisk.

Grate the cheese and add it to the eggs. If you plan to make a savoury waffle version, you can add aromatic herbs or spices. In this case I added a pinch each of thyme and oregano.

Add the dry ingredients to the liquid part of the batter: almond flour, salt, and psyllium. Whisk the batter and let it rest for several minutes.

At first the liquid batter will thicken, because psyllium absorbs moisture and swells.

Insert the Vienna waffle plates into the waffle maker and preheat it. Grease the top and bottom plates with coconut oil. The dough is thick enough and does not stick to your hands. Divide it into several portions, depending on the waffle size you want. Shape each portion into a ball and place it in the waffle maker.

Close the upper and lower plates of the waffle maker and bake the waffles for 5–6 minutes until golden brown.

In taste and texture, these waffles are very close to bread, because psyllium behaves similarly to ordinary flour.

You can experiment with this recipe by adding ingredients and discovering new flavours. For example, you can add finely chopped vegetables, bacon, herbs, nuts, and dried fruit.

Keto waffles can be frozen, then thawed before eating and crisped in a toaster.
