Instructions

Step 1

Prepare the ingredients listed. You may use either fresh zucchini or frozen grated zucchini pulp. In either case, after grating, salt the pulp and let it stand for 5 minutes, then squeeze out the released liquid thoroughly.
- 2
Step 2

Into the squeezed zucchini pulp, beat in a chicken egg, pour in water, and add salt. The liquid from the zucchini is very thin and should be drained off; in its place add water, milk, or kefir.

Step 3

Mix everything thoroughly, pour in the melted butter and add the wheat flour. Mix everything again.
- 4
Step 4

The dough should not be too stiff; it should be somewhat sticky and elastic.

Step 5

Preheat the waffle iron and lightly spray the plates with vegetable oil. Spoon 2 tablespoons of the prepared batter onto the iron and close it. Bake the waffles for about 3–4 minutes until golden brown. You can press the top plate of the waffle iron slightly to help the waffles brown more evenly.

Step 6

Place the golden zucchini waffles on a plate and serve with sour cream. Put the next portion of batter on the waffle iron, and so on. Serve the waffles hot. Enjoy your meal!
