
Zucchini Waffles
Description
It will be perfect with tea and coffee. If you like sweets – increase the amount of sugar by 2–3 times and you’ll get a great treat for tea. Adding the same amount of cheese, aromatic herbs and paprika to taste, you’ll get a snack version of waffles. Or simply follow the recipe and get a versatile version that can be served with anything. It can be served with tea or coffee.

Prepare the necessary ingredients.

Grate the zucchini and cheese using a coarse grater. Here the volume ratio is important – the zucchini should be twice the amount of cheese.

Place the grated ingredients in a bowl. Add the eggs, sugar, salt, and vegetable oil. You can use a little more oil; the waffles will be crispier, but also richer. Mix with a fork until smooth.

Add the sifted flour with baking powder. Mix.

You don't need to aim for complete smoothness.

Preheat the waffle iron and pour the batter in small portions. Remove the finished waffles onto a rack.
