First, boil the potatoes. Cut them into slices and cook. This way they will cook faster and will be easier to chop into small pieces.

While the potatoes are boiling, finely chop the garlic and chili peppers.

Finely chop the onion as well.

When the potatoes are cooked, transfer them to a frying pan, add chopped vegetables, turmeric, curry, mustard seeds, cumin, and asafoetida. Mix everything well. Using a spatula, break the potatoes into small pieces in the frying pan with vegetable oil.

Simmer the vadapav under a closed lid for about 7 minutes.

Roll the potatoes with vegetables and spices into balls. Sauté slightly and set aside.

Mix flour, baking powder, and water in a bowl. Add salt.

Pour vegetable oil into a deep, small pot, enough to thoroughly cover the bottom. Dip the potato vada pav balls into the flour batter and place them into the heated, even boiling, vegetable oil. Keep the balls in the oil for about a minute. Your vada pav is ready. Enjoy!
